In the desert belt of Jaisalmer, Barmer and Bikaner, cooks use minimum water and prefer to use more milk, buttermilk and clarified butter. A very distinct feature of the Maheshwari cooking is the abundant use of mango powder, a suitable substitute for tomatoes which is scarce in the desert. A combination with asafoetida is used to enhance the taste in the absence of garlic and onions.
